Firstly, if you've an idea for these prompts that you're excited about then go for it! Skip what I've written below, I'd love to read it.
I loved the Tortall books. It's the spaces in between that I'm most interested in, the what ifs and what might have beens.
Alex is fascinating and we get so little clue in the actual text as to his motivations. As far as politics go, Alex is one of the Hill Counties. (He and Delia have that in common. He's also one of the few who're unaffected by Delia's charms.) Why did no one consider the possibility that Alex was being mind-controlled by Roger? Why did they even let a man who is not a Knight have a Squire? I'd love any sort of greater exploration of Alex as a character. (While I'm speaking a lot of some sort of redemption or explanation for his actions if you do want to just embrace his evil, and make him Roger's willing accomplice, or even have it so that his actions are on the side of good, go for it. Evil Alanna and Good Alex is intriguing.)
I'd love more exploration of Thom too. We see so little of him. Thom's isolated, does not trust, doesn't make friends. Duke Roger kills anyone who's too talented at magic, and so Thom tries to fly beneath notice. Thom's dream, right at the start is. "I don’t want to be a knight! I want to be a great sorcerer! I want to slay demons and walk with the gods-" Alanna does that, he never does. He finally comes to court only for Alanna to reveal that she's not staying, and that Thom doesn't get invited to go with her. And he doesn't fit in, doesn't make friends, apart from Delia convincing him to raise Roger from the dead. (And I wonder, was Delia sent to the convent, did Thom know her from there.)
My dream is for Thom and Alex to somehow save each other. Alex is clever, he's exceptionally good at maths, which doesn't even go anywhere! And Thom is super-smart too!
Ishak is Alanna's male apprentice from The Woman Who Rides Like a Man. I'm just curious if his fate would have been different if he and Thom met. (And if Thom's would have been different.) I
Numair/Thom initially struck me as a crack pairing, but the more I've read it, the more I've liked it. They're both extremely powerful magic-users and I wonder what if?! (DNW: Daine/Numair. I like Daine & Numair, but I don't like the romantic relationship, although nothing against those that do.)
Fandom: Grigori Trilogy - Storm Constantine
Relationship(s): Owen Winter/Taziel Levantine (Grigori Trilogy)
This is a longshot, I'm really not expecting anyone to have even read these books, let alone offer an extremely obscure pairing from them.
Taziel Levantine is one of the grigori, the fallen angels who live amongst humanity. He is a charismatic musician, a powerful psychic, who fell in love with the mysterious Peverel Othman, and their relationship left him scarred. Owen Winter is half-grigori, and also a victim of Peverel Othman. Daniel was Owen's first love, and Taziel's most recent fling, and Daniel turned his back on both of them to be with the man who was Peverel. (The Trilogy's really Daniel's story, gay teenage psychic, sucked into a mysterious world of fallen angels.)
I love the idea of Owen and Taziel. Despite both being important characters in the previous books, and never having met, by the third their only mention is a single paragraph, shown through Daniel's eyes. Daniel's so absolutely certain neither of them can be in a good place, but they surprise him by having found each other. They've both been hurt and broken and I find the idea of them learning to heal together so intriguing.

I love Tayend. I loved Dannyl/Tayend and was so sad it imploded in the sequel series. Sometimes that happens, sometimes people grow apart, sometimes communication breaks down, sometimes you leave your lover in a homophobic society and fly off to another country to start an affair with a guy, and get annoyed when your lover follows you. (Poor Tayend, so excited at the idea of another adventure like how they met hoping it would rekindle their relationship, only for Dannyl to leave him behind. Although I was glad he got a chance to be an Ambassador and actually be good at it.)
Tayend gave up everything for Dannyl, and I was heartbroken by how things ended. I'd love any sort of glimpse of their lives, be it an attempt at reconciliation, or moving on, or a missing moment, or Tayend's point of view somewhere.

Ganymede & Hyacinthus & Pelops
Asterion/Icarus: Icarus and Asterion are trapped by the labyrinth in different ways. Icarus, imprisoned for his father's sins, and Asterion for his mother's. (Although really his father's.)
I rather love the idea of Icarus and Asterion getting together. I'm more into the idea of tragic, abandoned Prince, who is also a prisoner, than I am big brute of an unthinking monster. I'd love switching up the dynamic from the expected and having Icarus more dominant sexually if you decide to go for smut.
Ganymede & Hyacinthus & Pelops: Ganymede is the youth who Zeus abducts in eagle form and makes serve drinks in Olympus. Hyacinthus is Apollo's lover, who gets killed by a frisbee (discus) and then turned into a flower. Pelops is Tantalus' son, his father kills him, serves him as stew to the gods and gets sentenced to eternal torment. Poseidon seeing how beautiful Pelops is, and likely jealous of Zeus and Apollo's beautiful male lovers, decides to take Pelops as his.
What happens if these three beautiful men, who are loved by three different gods meet? I'd love any sort of exploration. (I'm also good with any / relationships here, but don't feel obliged.)
Achilles | Pyrrha/Patroclus of Opus & Deidamia of Skyros
Achilles | Pyrrha/Odysseus
There's a story where Achilles disguises himself as Pyrrha, the red-haired girl, in order to avoid the Trojan War, and hides amongst the women of Skyros. I'd love any sort of exploration of that, although preferably not with the gender essentialism or rape the original can have. Also where's Patroclus while this is going on? And how exactly is Achilles persuaded to join the war effort?
DNW: Rape. (I'm good with the Gods abducting mortals being considered rape. I just don't want stories where Achilles is raping the women on Skyros. And I don't want the Minotaur raping anyone.)

I love fantasy, sci-fi, and magical elements, including urban fantasy, supernatural stuff and superheroes. I like happy, or at least hopeful, endings. Or vengeance. There's something so innately satisfying about a protagonist triumphing against the odds and taking down the villain. I like light-hearted fluff, but I equally love deeply philosophical stories that get me thinking. In regards to smut I'm rather vanilla.
For the prompts that don't specify gender, I'd prefer m/m.

Head of evil organization/second in command that knows him better than he knows himself - Made me think of the Evil Overlord list! I prefer cartoonish, over the top evil, as opposed to actual evil-evil. I also love the idea of the evil guy looking for a partner.
Deposed Prince/Revolutionary Time Traveller - this prompt really intrigued me! And my immediate thought was "what if the deposed prince is the revolutionary time traveller..." Feel free to ignore that, it was a weird thought! I was then thinking what motivated the Revolutionary Time Traveller? Did they cause the revolution? Was the Prince, and/or his family evil? And I'd another thought of "what if the time traveller was in college and had one of those 'talk to someone from history' homework assignments, but had access to time travel..."
Hero Seeking True Love In All The Wrong Places/His Best Friend & His Unsuitable Soulmate - Whose unsuitable soulmate? :D And what makes them unsuitable? I love themes of soulmates, and those themes being played with and explored. And a choice like, a relationship of decades, vs instant attraction to a soulmate you've just met.
Competitor For Princess' Hand in Marriage/Disgruntled Prince Who Believes the Princess is Evil - There's fairy tales in which suitors need to undergo trials in order to win a Princess's hand in marriage, and the cost of failure is death. Is the disgruntled prince another competitor, or is he her brother sick of seeing everyone compete for her hand when he's got two hands of his own? Is the Princess actually evil or is she as fed up with it all? Is there fairy tale magic or curses at play? Or perhaps even a Cabin in the Woods ritual wherein they need to compete to stave off an ancient evil. So much possibilities!
I love the other prompts too. I like duality and contrasts, and unlikely lovers finding each other. I like stories that do the unexpected, like making Light Mages evil and Dark Mages good, or at least them both being grey.
